• Two (2) pounds of boneless chicken thighs (washed and dried)
  • 2 Tbsp. Arawak Farm® Jerk Pepper Sauce #3
  • Tsp. Extra Virgin Olive Oil (EVOO)


In a plastic bag, add the chicken, EVOO and Arawak Farm® Jerk Pepper Sauce. Massage well and seal the bag.

Marinate overnight, OR a minimum of 4 hours.


Preheat the grill (gas or charcoal) to high heat.

Grill about 15-20 minutes; turning every 5 minutes.

Let the chicken rest for about 10-15 minutes.

Rough cut chicken and place in a metal bowl and add one (1) Tbsp. of Arawak Farm® Jerk Pepper Sauce and cover with foil.

Place in a warm oven (about 200°)

NOTE: We recommend using boneless dark meat as it is more forgiving than white meat. Using dark meat allows for a nice char, which will caramelize the marinade and provides a more intense flavor.
